Create Cubes without Clouds

Caught up in the cocktail tray but ashamed of your foggy ice? This tray, made by British Columbia-based Lumeire, separates out the "white ice" by mimicking the freezing pattern of a lake. Ice freezes layer-by-layer—top to bottom—and air and impurities are trapped at the bottom where they can be removed.
Polar Ice Tray, $59.
Crystal Clear Ice Cubes:
Treat your drinks to crystal clear ice! This ice cube tray has been designed so your ice remains crystal clear by allowing opaque 'white ice' to be separated and removed, and so too removing impurities in the ice. The cubes come from a single cracked block of ice, so all irregular in shape and size, meaning no more 'boring' rectangular cubes!

Freeze it Super Fast

Polyscience's Anti-Griddle is for anti-cooking. Inspired by celebrity chef Grant Achatz, the machine quickly freezes sauces, purees and foams—meaning you can create frozen treats with crunchy outsides and still-liquid centers. Since the surface gets down to minus 30 degrees Fahrenheit, food will freeze before your eyes.
The Anti-Griddle, $1,199.

The Anti-Griddle®

Flash Freeze Your Way to New Terrain

PolyScience temperature control expertise goes well beyond Sous Vide and other methods of adding heat. We're also experts at taking heat away quickly.
The resulting flash freezing enables you to quickly turn sauces, purees, crèmes, vinaigrettes and other foods into very different solid or semi-frozen creations. Cool, creamy centers and crunchy surfaces can be created in just seconds with the PolyScience Anti-Griddle featuring a -30°F / -34.4°C plate that allows rapid unidirectional freezing.
The Anti-Griddle flash freezing technique, originally inspired by Chef Grant Achatz, allows you to easily prepare appealing dual-texture creations and explore an entirely new culinary realm. The possibilities are truly endless.

"The possibilities are endless. We re-invented smores with a frozen marshmallow, liquid center chocolate, covered with Graham Crackers. This machine makes us rethink what we can actually do. Not only in the restaurant but actually at home with kids and family."
-Matthias Merges, Charlie Trotter Restaurant, Chicago

Stir-Free Stir-Frying

Many would argue that there's not a thing wrong with an old-fashioned wok, but the more clumsy among us could use a bit of help. The Boomerang Wok, designed by Royal VKB based in the Netherlands, is designed to allow you to toss your stir-fry unassisted—and without much culinary skill.
Boomerang Wok, $150.
For all those Iron Chefs out there who get a little, er, enthusiastic with the wok. Keep those delicious morsels from hurling across the kitchen. Nikolai Carels' patented cupped edge means with the aid of a whisk or spatula ingredients can be tossed and returned--ergo its name, the Boomerang. Ingredients stay in until the spatula lifts them out. Stir frying is easier. So, too, larger pieces of protein, such as a filet of beef or fish, easily flipped thanks to the cupped lip. The Teflon pan interior means easy peasy clean ups. Of course, the best part is the shape. The Boomerang is too striking to stow away.
